Vegan Spaghetti Bolognese

You will need:

  • dried lentils200g dried lentils
  • diced onion1 large onion, diced
  • minced garlic2 cloves of garlic, minced
  • diced carrots2 medium carrots, diced
  • diced celery2 sticks of celery, diced
  • can of chopped tomatoes400g can of chopped tomatoes
  • tomato puree2 tbsp tomato puree
  • dried basil1 tsp dried basil
  • dried oregano1 tsp dried oregano
  • salt and pepperSalt and pepper to taste
  • spaghetti400g spaghetti

Instructions

  1. Start by rinsing the lentils under cold water.
  2. In a large pot, sauté the onion and garlic until they become translucent.
  3. Add the carrots and celery to the pot and continue sautéing for another 5 minutes.
  4. Add the lentils, chopped tomatoes, tomato puree, dried basil, dried oregano, salt, and pepper to the pot. Stir everything together.
  5. Cover the pot and let it simmer for about 30 minutes until the lentils are cooked and the flavors are well combined.
  6. While the sauce is simmering, cook the spaghetti according to the package instructions.
  7. Once the spaghetti is cooked, drain it and return it to the pot.
  8. Pour the lentil Bolognese sauce over the spaghetti and mix well.
  9. Serve the vegan spaghetti Bolognese hot, garnished with fresh basil if desired.

Notes

You can add some vegan parmesan on top for extra flavor. Also, feel free to add other vegetables you like to the sauce.
