Stuffed Bell Peppers for Vegans and Non-Vegans

You will need:

  • bell peppers6 bell peppers
  • quinoa1 cup quinoa
  • vegetable broth2 cups vegetable broth
  • black beans1 can black beans
  • corn1 cup corn
  • onion1 onion
  • garlic2 cloves garlic
  • olive oil1 tbsp olive oil
  • cumin1 tsp cumin
  • chili powder1 tsp chili powder
  • salt and pepperSalt and pepper to taste
  • shredded cheese1 cup shredded cheese (optional)
  • ground meat1/2 lb ground meat (optional)

Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds inside.
  3. In a saucepan, bring the vegetable broth to a boil, then add the quinoa. Lower the heat and let it simmer until the quinoa is cooked.
  4. While the quinoa is cooking, heat the olive oil in a pan. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  5. Add the black beans, corn, cumin, chili powder, salt, and pepper to the pan. Stir until everything is well combined.
  6. Once the quinoa is cooked, add it to the pan and mix well.
  7. Spoon the quinoa mixture into the bell peppers, filling them up to the top.
  8. For the non-vegan version, cook the ground meat in a separate pan and add it on top of the quinoa mixture in the bell peppers. Top with shredded cheese.
  9. Place the stuffed bell peppers in a baking dish and bake for about 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  10. Let the peppers cool for a few minutes before serving.
