You will need:

  • vegetable broth4 cups vegetable broth

Instructions

  1. Start by rinsing the lentils under cold water and set them aside.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the diced onion and minced garlic to the pot and sauté until the onions become translucent.
  4. Add the diced carrots and celery to the pot and continue to sauté for another 5 minutes.
  5. Stir in the cumin and turmeric, then add the can of diced tomatoes, including the juice.
  6. Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the lentils are tender.
  8. Season the soup with salt and pepper to taste.
  9. Serve the soup hot, garnished with fresh parsley.

Notes

This soup can be stored in the refrigerator for up to a week, or frozen for up to three months. It's a great make-ahead meal for busy weeks.
